Piri Piri Chicken

A hot and spicy chicken dish. Great for serving as a entree or as a main meal. A very easy one-pot meal.

Ingredients
  

  • 1 kg Chicken Drumsticks or Chicken Thighs
  • 1 large Onion cut into big blocks
  • 4 Carrots peeled and sliced
  • 4 Potatoes peeled and sliced into thick discs
  • 6 Tomatoes chopped
  • 1 tsp Exotic Spices Ground Black Pepper
  • 1 tsp Exotic Spices Food Aroma
  • 4 tbsp Cape Herb Sweet & Sticky Chicken Spice.
  • 2 tsp Exotic Spices Ground Paprika
  • 4 tbsp Exotic Spices LM Piri Piri Sauce
  • 3 tbsp Butter
  • 125ml Oil

Instructions
 

  • Preheat your oven to 180 degrees Celsius.
  • Season the chicken thighs or drumsticks with Cape Herb Sweet & Sticky Chicken Spice and set one side.
  • Bring water to the boil on the stove and parboil the potatoes for 15 minutes.
  • Remove the potatoes from the water and set one side.
  • Combine the carrots, tomatoes, onion, oil and Exotic Spices LM Piri Piri Sauce.
  • Add the Exotic Spices Ground Black Pepper, Exotic Spices Ground Paprika and Exotic Spices Food Aroma.
  • Stir to mix well.
  • In the roasting dish, layer the potatoes at the bottom of the dish.
  • Top with the vegetable mixture.
  • Put the spiced chicken thighs or drumsticks into the mixture in the roasting pan and submerge them.
  • Place the lid on the roasting pan.
  • Bake in a preheated oven for 2 hours.
  • Serve with freshly buttered brown bread to mop up the sauce.
