Instructions
Preheat your oven to 180 degrees Celsius.
Season the chicken thighs or drumsticks with
Cape Herb Sweet & Sticky Chicken Spice
and set one side.
Bring water to the boil on the stove and parboil the potatoes for 15 minutes.
Remove the potatoes from the water and set one side.
Combine the carrots, tomatoes, onion, oil and
Exotic Spices LM Piri Piri
Sauce.
Add the
Exotic Spices Ground Black Pepper
,
Exotic Spices Ground Paprika
and
Exotic Spices Food Aroma
.
Stir to mix well.
In the roasting dish, layer the potatoes at the bottom of the dish.
Top with the vegetable mixture.
Put the spiced chicken thighs or drumsticks into the mixture in the roasting pan and submerge them.
Place the lid on the roasting pan.
Bake in a preheated oven for 2 hours.
Serve with freshly buttered brown bread to mop up the sauce.
